Although not a diabetic myself, I do enjoy eating and must watch my weight and eat to stay healthy. The goal of this book was to include only recipes that fit the diabetic life style and at the same time were delicious. I also know that many are like me and lead a hectic life style with the demands of work and family. At the same time we all want to enjoy a delicious meal that is easy to prepare. Being a diabetic does not mean that you can’t do that.
You see I believe it’s an “and” world. What do I mean by that? It’s this. You can be a diabetic and at the same time be very busy, and lead the lifestyle your desire, and have delicious meals that are easy to prepare.
I’m not going to sugar coat it and say that being a diabetic does not present certain challenges in life. It does. At the same time that certain doors are closed, others are opened.
